There has always been a strong market for jellies and gummies formed into recognizable profiles – but until now it has been restricted to two-dimensional shapes (a contoured surface with a flat base), while definition and product quality are often hampered by the limitations of starch moulding.

Baker Perkins’ development of starch-free depositing technology for three-dimensional jellies means that intricately shaped jellies are now easily achieved – and the market is set to take off.

The problem has been that intricate 3D shapes are simply not possible with traditional production systems such as starch moulding. Starch-free depositing into solid moulds is the only way to make true 3D shapes.

3D product possibilities include completely spherical balls; full fruit shapes such as raspberries, strawberries and pears; as well as animals and cartoon characters. There is also obvious potential for character merchandising linked to television and films.

Baker Perkins works closely with ingredient suppliers to use high performance gelling agents including quick setting formulations of pectin, gelatin, carrageenan and starch.

We have recently introduced the first fully automated, high-output, high efficiency depositor for 3D jellies and gummies, with a patented mould design ensuring 100% ejection of the products. It is capable of outputs ranging from 100 to 1,000 kg/hour, and there is plenty of scope for scaling up as demand increases.
