High production rates with precise weight control
The TruClean™ Wirecut offers outstanding weight accuracy of +/- 1% on plain dough and 2% on dough with inclusions, through unique die and filler block technology. No other wirecut comes close to this performance. For products with inclusions, cutting consistency and deposit accuracy can be improved with an oscillating knife.

The TruClean™ Wirecut has been designed in accordance with industry guidelines on sanitation, including the GMA’s 10 Principles of Equipment Design. Every detail has been meticulously engineered to minimize accumulation of debris and to make thorough and effective cleaning to avoid cross-contact from allergens and pathogens as easy as possible.

Simple push-button or touch-screen graphics, good visibility of the product area and full on-the-run adjustment make effective operation straightforward and intuitive. The GMA’s Principles of Equipment Design help to simplify maintenance and reduce costs - open access, fewer guards and easy removal of guards and other components.

Angled Overhead Wirecut
The angled overhead wirecut machine delivers up to 25% higher production. It lays down soft dough wirecut cookies at an angle to create "nested patterns": these improve utilisation of the baking surface in the oven.
By positioning the machine head at an angle to the oven band, dough pieces can be nested to increase product density. This optimization of the available oven band area produces significant production gains. These rise from 14% on 38mm diameter cookies to 25% with 100mm diameter cookies.
The angled wirecut is part of the TruClean™ range which brings a radically innovative approach to hygienic design. It provides best-in-class dough piece weight control, ease of cleaning, simplicity of operation and fast product changeovers.
Double Eccentric Guillotine
The double eccentric guillotine is positioned after a bar former to cut the continuous strip of product into bar lengths.
The mechanism provides a two stage precise cutting action. Rapid blade movement during the cutting phase reduces product distortion and sticking. Product length is easily and quickly adjusted between bite size and full size bars. The guillotine handles a wide range of products, and large inclusions such as dry fruit, nuts and grains. It gives a clean cut through tough and difficult materials.
A blade heater and blade scraper are available to clean the blade when working with more challenging products. This helps reduce maintenance costs by ensuring long intervals between cleaning.
Filled cookies can be produced on a standard wirecut machine using an optional encapsulation module and iris cutter. Baker Perkins’ encapsulation system can be fitted to any wirecut to convert the machine from a standard unit to one that can do both cookies and encapsulated cookies.
