New video demonstrates Series3 rotary moulder benefits

A new video from Baker Perkins shows how the innovative TruClean™ Series3 rotary moulder is setting the standards in cleaning, maintenance and hygiene for soft dough biscuit and sandwich cookie production.

The video highlights a key feature of the Series3 – rapid start-up. Both initially and after any stoppages, the machine reaches full output rapidly.

Easier cleaning reduces operating expenditure, while open access, fewer guards and easy removal of components means maintenance costs are cut.

The elimination of covers allows the majority of debris to fall straight to the floor for easy removal; all surfaces are visible for simple cleaning. Straightforward removal of the moulding and rubber rolls gives complete access between the frames for deep cleaning; there is excellent access to the forcing roll, and a special tool has been developed to clean dough from the longitudinal groves in the roll.

Adding the refinement of a new ‘park’ location for the scraper knife gives easier access, so changing both knife and moulding/die roll is much simpler and quicker. Fine tuning of the dough piece weight is achieved by altering the position of this knife, which scrapes the surface of the roll to ensure every cavity is evenly filled.

Web tensioning is now automatic to ensure clean extraction and to remove the risk of over-tensioning causing damage and shortening web life.

Throughout the machine, chains have been replaced by direct drives, eliminating a potential hygiene and maintenance problem. The gear drive to the rotary moulder has also been removed; it is now clutch driven, eliminating grease and exposure to teeth, achieving safer, cleaner and quieter operation.

The TruClean™ Series3 is designed for consistency at high outputs in environments where close control of size, weight and texture are essential. A full range of adjustments is available to ensure that products - ranging from the thinnest crisps to the thickest bars, the smallest ingredients to the largest biscuits - can all be produced accurately and reliably.

The new design TruClean™ Series3 retains all the important high-performance characteristics of the previous Series 2 machine, proven in high-performance applications around the world. The TruClean™ Series3 is fully compatible with its predecessor, so die rolls can be re-utilised and there is also a version that can accept die rolls originally supplied for Baker Perkins’ 390 range of rotary moulders.
