Baker Perkins will be attending the ASB's BakingTech 2017 at the Hilton Chicago in Chicago, IL, February 26th - 28th, 2017.

A key highlight of the show is flour-free operation, eliminating dust from this part of the bakery, which leads directly to a reduction in operational, cleaning and maintenance costs as well as the elimination of cross-contact risk.

Baker Perkins' flour-free system comprises divider, rounder, flour free conveyor/resting system, and a Multitex4™ final moulder. The system operates with a Baker Perkins Accurist2.1™ ram-and-knife divider and conical rounder but is equally compatible with an extrusion divider and bar rounder.

No flour dusting is required on any part of the process. Even the stickiest dough pieces are prevented from adhering to the rounder, conveyors and moulder by a combination of process conditions, equipment design and choice of materials.

Not only does eliminating flour dust reduce ingredient, cleaning and maintenance costs it also removes a hazard from the bakery atmosphere.

Baker Perkins' dough mixing and dough forming systems for high-output pan bread plant bakeries are designed to maximize quality and minimize cost. Gentle dough handling arising from innovative design, combined with the latest control technology, produce bread at new levels of consistency and excellence.

In particular, the Multitex4™ final moulder minimizes stress and damage to the dough through gentle handling. The integrity of the dough structure is preserved, giving a loaf with higher value and consumer appeal. There is an increase in loaf volume, better color, increased resilience and greater softness. Gentle handling is also a feature of the Baker Perkins Accurist2.1™ ram-and-knife divider and conical rounder.
