  • Frozen Dough Cookies

    One of Baker Perkins' specialties is the Frozen Dough Machine. The dough piece forming process is the same as a wirecut, but dough pieces are laid onto paper for freezing.

    The process is based around a Baker Perkins TruClean™ wirecut with a series of standard modules for wire cutting, topping, paper slitting and paper cutting. Modules are selected on the basis of product to be made and the style of packing - onto paper or directly onto a band for bulk packing.

    The TruClean™ frozen dough wirecut produces the full range of cookies, bite size to gourmet, from 46 to 121mm. It handles most types of soft dough; there is an optional oscillating knife attachment for sticky or chunky dough. It can incorporate large inclusions and toppings for gourmet varieties. Extra value can be added to the cookies with topping devices, and recovery systems ensure that excess topping can be recovered, even on paper-fed machines.

    High accuracy wirecut machines are the key to quality cookie production, and Baker Perkins' wirecuts are especially designed for the very soft doughs typified by the classic chocolate chip cookie. Baker Perkins' wirecut machines can be specified with a range of options to ensure they meet your exact requirements. The modular concept means that additional capability can be added at any time.

    The Baker Perkins TruClean™ wirecut combines hygienic design with the ability to control product weights very closely, and gap adjustability that allows large inclusions (typically chocolate chunks, nuts and raisins) to be handled without impairment. Unique filler block and die technology controls piece weight and product positioning, and minimizes waste and giveaway of expensive ingredients. This allows higher belt loading to maximize freezer space and packaging materials.
